Yellow Squash for Dessert

Daniel and I went to the store after dinner last night with the baby in tow. Jesse and Matthew stayed home. As we were walking through the produce isle he spotted a yellow banana squash. "Mommy, can we get one?" Of course I wasn't going to pass up this opportunity to let him pick his very own vegetable to eat. Once in the lifetime of a child. He talked about how he wanted the skin peeled off and that he wanted to eat it when we got home. Well, I told him we would slice it up and cook it. He was very interested to know how and what the ingredients would be. Once we were home and everything was put away I started chopping it up to sautee. He pulled a chair up to help. Priceless. Once it was done we sat together each having our own little bowl and had dessert. He LOVED it and it was the best I ever had.
